Holy cow! What a difference cooking makes. A not good difference to your waist and waste (raw vegetables are the best way to keep you regular). The point I want to make is one my mom made to me a long time ago. A cooked mashed cup of zucchini is 38 calories. A large raw zucchini is 3 calories! Either way look at how few calories vegetables are and look at how much cooking increases the calories.
Last night I made an awarding winning masterpiece from the Living Cuisine Cookbook by Renee (see my book reviews). This delicious lasagna uses raw zucchini for “noodles”. It is perfect! And so light in comparison to standard lasagna. For those of us with GERD this is a dream. What are the calories for a cup of cooked egg noodles? 213! Blam! So by enjoying the awarding winning masterpiece instead of the standard lasagna, not only does the macadamia/pine nut and olive oil “cheese” taste infinitely better you are saving a perfect ton of calories just in the “noodles” alone where you start by having 3 calores instead of 213 calories.
Oh but macadamia and pine nuts those are caloric, true, lets see it in comparison to cholesterol and puss riddled cheese (remember cholesterol is only found in animal products). I come up with 90 for the pate and between 200-312 for the cheese. That is a tough one to calculate, for simplicity I will just say given all the variables I come up with significantly less calories with the nut pate. Variables include things like when people do cheese realisically they frequently kill it in desparation for some sort of feeling and Renee’s food relies on flavorful herbs and ginger and lemon to provide that feeling of fullness rather than using a ton of heavy foods. So the entire 8 serving lasagana contains 1.5 cups of macadamia nuts and .25 pine nuts. 2 cups of nuts divided by 8 = .25 a cup of nuts plus a little olive oil. I can’t imagine a similiarly sized serving of standard lasagna only containing .25 of a cup of cheese. That would be more like .5 of a cup. The first lasagna recipe I bring up in google is quoted as being “like Olive Garden’s” and has literally 10 cups of various cheeses in the ingredients, plus sprinkling some on top! Wow. Ok. At that rate 10 cups divided by 12 servings = .8 cups of cheese plus the sprinkle on top and we won’t count that. That is 312 calories of cheese according to the fitday.com “cheese,NFS” catagory. So for that lasagna 312 vs. my 90. And you saved about 200 calories on the noodles.
Well I am stuffed I just had some leftovers for lunch while I am typing this. I need to work on my ideas about portions. Maybe I will start using smaller tupperware. Any ideas on how to view a portion?
